Ready for fresh veggies? Get healthy this summer since June is Fresh Fruits and Vegetables Month!
Today we have the Top 5 Fresh Veggies for summer.
Avocado. Who doesn't love an avocado in the summer?
There's so many options from the basic guacamole to a unique
avocado mac & cheese. In the hot summer, no one wants to turn
on the oven or stove. Avocados are great because they don't have
to be cooked, just throw them on a sandwich or add salt and
enjoy alone.
Nutrition Facts:
• 50 calories
• 2 grams of fiber
• Source of good fat (low in cholesterol)
Fresh Spinach. Once again, this is a great vegetable that doesn't
need to be cooked. Prepare a great salad by adding some beans,
tomatoes, croutons, and dressing.

• 1 gram of fiber
• Great source of Vitamins A, C, E and other nutrients
Eggplant. Perfect to throw on the grill for a few minutes with
a little bit of oil. In the cooler weather, it can also be stuffed or
breaded for a rounded meal. They even look pretty in a fruit or
vegetable bowl/basket!

• Great source of Potassium
Zucchini. Zucchini boats anyone? Cut these in half down the
length of the zucchini and make cheese-filled boats for an
appetizer. Or, cut the zucchini into rounds and grill it on the

• 1 gram of fiber
• Good source of Riboflavin, Thiamin, Niacin,
and Vitamin B6 (the energy vitamin!)
Asparagus. They are practically cancer-fighting sticks!
Asparagus can actually be really tasty with a little bit of
oil, garlic, and salt. BBQ them to desire crispness and
start fighting that cancer!
